yummy. healthy. easy. food. - On Guard Sweet Potato Muffins (gluten free)





First you need to know I am not a gourmet cook.  At all.  But I do LOVE food.  And I love to try new recipes and come up with new ideas for feeding my family.  I feed 6 people at least three times a day.... with Baby Lulu now joining in the eating game that will be 7 people.  We like healthy, real food but we are also on a budget of money and time.  So in our house a recipe has to be... 1. Delicious    2. Inexpensive   3. Few ingredients    4. Real, Healthy food

I hope to share on this blog some of the yummy things that help feed our family.... Here is recipe number one:  Gluten Free Sweet Potato Muffins  with On Guard (doTERRA essential oil)
(I like to bake a 9x13 full of sweet potatoes.  Use some for dinner as a side.  Slice some up and add to soups or salads.  And then use some for these delicious muffins.)

Makes about 16 muffins
1 stick butter, melted
1/2  cup dark brown sugar
1/2 cup pure cane sugar
2 extra large brown eggs
1/2 cup milk
1/2 t vanilla
1 1/3 cup mashed baked sweet potato
1 1/3cups gluten free flour mix *see recipe below
2/3 cup almond flour
1t baking soda
1t salt
2 - 4 drops doTERRA On Guard essential oil  (one drop goes along way, add more to give more kick)
1-2 drops doTERRA Ginger essential oil

Preheat oven to 350.  Beat butter and sugars.  Beat in eggs one at a time and then beat in the milk, vanilla.  Stir in the On Guard oil.  Beat in Sweet Potatoes.  In separate bowl  mix together flour, baking soda and salt.  Combine all together.  Grease muffin tin with butter and fill each cup 1/2 to 3/4 full.  Bake about 18 minutes or until centers are done and toothpick comes out clean.

**  Gluten Free Flour Mix
(I have used this to make muffins, pancakes, cookies, & bread  all with a good result.  I make up this big batch and store to have on hand)

4 cups brown rice flour
2 cups white rice flour
2 cups quinoa flour
4 cups sweet white sorghum flour
4 cups potato starch
2 cups Tapioca flour (or starch, it is the same thing)
10t chia seeds
