yummy, healthy, easy food: southwestern burger and slaw



The recipes I share are not fancy but they are easy and super yummy.   I hope you enjoy this one.  It is great for the summertime.

Step 1: Start rice in your rice cooker.

Step 2:  Mix up the coleslaw.
Southwestern Slaw
Mix up the following ingredients.  Chill in the fridge while you prepare the rest of the meal.
1 Bag of coleslaw mix
1 red bell pepper, diced
1/2 cup olive oil
2 T red wine vinegar
1 T white cane sugar
1/2 cup chopped fresh parsley
2 drops of doTERRA cilantro oil
Jalapeno pepper, seeded and diced (i keep this on the side for those who want the extra kick)

Step 3:  Form 1 pound of ground hamburger meat into 6 patties and throw it on the grill.  We have found purchasing grass feed, organic beef requires no extra ingredients  (because it is delicious all on its own)  and it fills everyone up more so the portions do not have to be as large.

Step 4:  Mix up the sauce for the hamburger.  The left overs of this sauce are great to use as a salad dressing or over chicken on another night.
Southwestern Sauce 
2/3 cup mayo
1/3 cup milk
3 drops of doTERRA lime oil
2 drops of doTERRA cilantro oil
1 t ground cumin
3/4 t salt
1 t ground black pepper

Step 5:  Chop Tomato and Avocado.

Step 6:  Plate your food.   Start with a bed of rice topped with the diced tomato and avocado. Then your hamburger topped with a slice of cheese and drizzled with the southwestern sauce.  Add the side of Southwestern slaw you are finished.  Enjoy!
